A Country song called "Sunbeam Men" is about working in a Bakery. The long, miserable years of working in a hot commercial bread bakery in Phoenix, Arizona, for 24 years. And how the sweat rolled off my face as I racked the hot bread pans onto the bread racks, which were monorailed to the moist proof box, as the humidity raised the breads to the correct height. Then they were taken out of the proof box on another rail and loaded up into the miserable, hot ovens to bake. We took the pans off the racks with the bread mitts and placed them on the stove, as the searing lids would ride down the chute and then be placed on the pans to make a sandwich loaf. They would ride the bar to the man-made hell and turn the white to brown with a smell with no frown. I cannot count the times we were burned harshly as we earned our paycheck from week to week. The bread would come out and head to the de-lidder as the loaves were taken to the wrapping department for their covers. I despised this role as a bakery man, but my family depended on me, the best I could. Now I'm retired, I do miss the men who helped me on that bakery battlefield of life.
